Mrs. Smith Chocolate Cake

The wedding cake that Freya wanted

This is the cake recipe that  has been shared and shared again. My mom originally wrote it out on a recipe card that got so splattered with chocolate cake batter it was harder and harder to read. Thankfully I got it before it became illegible. This was the recipe Freya used for the wedding cake she wanted to make.

Now you can have it too!

I don't make this cake as much as I used to. I once had a craving for it so I baked a layer cake, iced it the way I like it - with a thick butter icing, and brought it to the neighbours. We cut into it, I had one piece with a cup of tea and then I left it there. She had three teenage boys living at home at the time so it disappeared pretty quickly.

So, without further ado, here's Mrs. Smiths Chocolate Cake - warning - lots of sugar ahead - but that's what makes it so rich.


Melt together:

1/2 cup margarine or butter - depending on how rich you want it

2/3 cup of cocoa

1 cup of water

Let cool a few minutes or use just warm water


1 cup sour cream

2 eggs

2 cups of white sugar

Blend in:

2 cups of flour

2 tsps of soda

pinch of salt

Pour into a 9 x 13 pan or two round cake pans.

Bake for 30 minutes at 350 F or until done.

Ice with butter cream icing:

1/2 cup butter  softened

mix until even softer - beat lots of air into it

Add 4 Tbsp heavy cream

1 tsp vanilla

Blend in 1/3 cup cocoa

Then blend in icing sugar until the consistency you want. You can adjust these amounts according to taste. I don't technically follow recipe for the icing but thought I would give you approximate amounts of how I make it.
